I actually prefer fresh mushrooms. I usually buy criminis, aka baby bellas, but they're difficult to find at a reasonable price and require a lot more effort. Also, I tend to forget that I have them, and then they go all funky in the fridge. :sad:

I've never seen chestnut mushrooms (or Black Poplar mushrooms, as they're known here). I may have to have a look around for them. Thanks for the tip! :)

Ever had porcini mushrooms and rice? Sooooooo good, I never knew mushrooms could be so tasty. They're pretty damn expensive but a nice treat if you can find them.

Black Eyed Peas à la Greybeard:

1 can (15 oz.) black eyed peas
1 small can (4 oz.) mushrooms
2 oz. ham, diced
1/4 large sweet onion, diced
5-8 large olives, chopped (optional)
1/4 tsp. ham-flavored soup base
1 tsp. Italian seasoning
2 tsp. garlic powder
1/4 tsp. fresh-ground black pepper
1-2 tsp. Chinese mustard (for kicks)
1-2 oz. shredded mozzarella cheese

1. Mix all ingredients except cheese in a 2-quart sauce pan.
2. Heat on medium for about an hour or until hot.
3. Top with cheese.
4. Enjoy. :)

Chicken Broccoli Hollandaise Casserole


*Use whatever amount of ingredients you want.

(2-3)boneless skinless chicken breast*
Broccoli*
A box of stuffing (unless you make your own)
Fried onions* (the kind for casseroles)
Hollandaise sauce mix

Preheat oven at 350 F.

Cook the chicken in a skillet. Season how ever you like.
Steam the broccoli.
Make the hollandaise sauce according to the package.

Add in the stuffing first to the casserole dish. It helps everything stay.
then put in the chicken, broccoli, and fried onions.
Lastly, pour over the whole dish.

Back for about 20-30 minutes (depends on your oven). Keep watching, you don't want to burn it.

You'll be wanting to make it on every occasion.

I'm sure somebody already mentioned mac n' cheese so I'll go with paninis!

Ingredient basics: bread, meat (optional), veggies, cheese, butter or olive oil.

I don't have a panini grill so I use a panini pan (? has ridges to toast it).

Heat pan, spread butter or oil as non-stick base. Combine ingredients and toss in pan. Flip with spatula once bread is golden brown to toast other side, and you're done.

This is my go to meal when there are leftover vegetables, or not much groceries in the house. Really can't go wrong since you can combine whatever. Nom nom nom

Sometimes when I want a snack, I like to just slice pickles in half, roll them up in a slice of roast beef, ham, or turkey, and spread a bit of cream cheese inside of the roll.
 
Pizza. Call pizza hut. Give address. Wait for delivery. Pay the dude. Enjoy. Total prep time usually 45 minutes.
